- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground ginger (optional)
- 1/4 tsp salt
Crust:
- 1 store-bought pie crust (or homemade, if preferred)
Directions:
1. Prepare the Sweet Potatoes:
- Preheat your oven to 400°F (200°C).
- Prick the sweet potatoes with a fork and bake them for about 45 minutes to 1 hour, or until they are soft and can be easily pierced with a fork. Alternatively, you can microwave the sweet potatoes for 8-10 minutes until tender.
- Once they’re cool enough to handle, peel off the skin and mash the sweet potatoes until smooth. You’ll need about 2 cups of mashed sweet potatoes for the filling.
2. Make the Filling:
- In a large bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, milk, melted butter, eggs, vanilla extract, cinnamon, nutmeg, ginger (if using), and salt.
- Use a hand mixer or whisk to blend everything together until the mixture is smooth and well-combined
3. Assemble the Pie:
- If you’re using a store-bought pie crust, place it into a 9-inch pie dish and lightly crimp the edges. If using homemade crust, prepare it as directed.
- Pour the sweet potato filling into the prepared pie crust. Smooth the top with a spatula.
4. Bake the Pie:
- Bake the pie at 350°F (175°C) for 45-50 minutes, or until the center is set (it should no longer jiggle) and the edges of the crust are golden brown.
- If the crust starts to brown too quickly, you can cover the edges with foil to prevent burning.

- Let the pie cool completely before slicing, as this allows the filling to set properly.
